The Best Ever Whole Wheat Pancake

One Sunday morning I woke up with a craving for pancakes, not just boxed brand pancakes, but actual homemade, flour on your counter, sweating in the kitchen homemade pancakes. I don’t claim to be an expert on baking, this is something I leave to experts; pastry chefs and professional chefs. I only know that their is something magical about flour, milk, eggs, sugar, vanilla extract, cinnamon, nutmeg, baking powder and a touch of salt. These things combined in the perfect ratio yield the most delicious, fluffy, budget friendly and crowd pleasing breakfast treats. My version was made with whole wheat flour and literally brought a tear to my eye. Once this beauty was topped with blackberries and mint it was ready for its close up before being slathered with butter and maple syrup. It now rest comfortably digesting in my belly! So your next Sunday morning try waking up a little earlier and mixing up a batch, making a little mess and sharing some approving full-mouthed smiles.


  • 2 c.  Whole Wheat Flour
  • 1/2 c. Milk
  • 2 Eggs
  • 1/2 c. Sugar
  • 2 tsp. Vanilla
  • 1tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 1-2 tbsp. Baking Powder
  • Butter for griddling cakes
