So I don’t just cook, I love to play amateur bartender many of nights. I like creating infused liquors with whatever herbs, fruits or vegetables that I might have left over. Some turn out wonderful, others not so much. Note to self onion infused vodka doesn’t play well to a crowd. However most fruits and veggies infuse liquor lovely. So for this little cocktail featured here I used 3 ounces of gin infused with cucumber mixed with ginger beer and as a garnish I used cucumbers that were soaked in gin overnight. This drink is reminiscent of a Pimm’s Cup and refreshing on a hot summer day.. Enjoy.
- 3 Ounces of Cucumber infused Gin (soak chopped cucumber in 2-3 cups of gin overnight)
- 1 cup Ginger Beer
- Gin soaked Cucumbers (use as garnish)
