This meal is pretty simple and perfect for the change in the seasons as we welcome autumn with heartier meals that include more of a focus on carbs. Its something about colder weather that starts to renew my love for potatoes. I love them as a side and sometimes I give them the starring role. The dish featured was very much one of those starring role dishes. I whipped up some sweet potatoes and added a teaspoon and a half of habanero powder, butter and maple syrup, to give the potatoes that sweet/ hot taste that we all love so much. I topped the potatoes with a simple sautéed white fish; you can choose which ever fish you desire; tilapia, cod, sea trout etc. I then topped the fish with a creamy sriracha mayo and greens tossed in oil and salt. The dish is simple and the creaminess of the sauce helps to cool your palate as the sweet potato mash is indeed spicy. So welcome in the cooler Autumn months with this simple but complex tasting dish.
