You have to live under a rock to not have heard about this “Avocado Toast” trend that has taken the world by storm. Listen I can’t knock it; I like Avocado toast too. However, I find it difficult sometimes to either find a good sturdy bread to stand up to smashed Avocado or to have time to toast bread. So I started going with a lower calorie and quick substitute; behold the humble rice cake. Not only is it portable but it’s sturdy and last forever. The rice cake gives me the perfect textural mix to support a mash of Avocado, chili flakes, salt, garlic and pepper. If you want to fancy it up add some sliced tomatoes and my newest favorite topper; chili roasted corn (as seen in the pic above).
So when your pressed for time and need a quick breakfast or snack try this little combo, I guarantee you won’t be disappointed.
- Chili flakes
- 1 Garlic clove or 1tsp Garlic Powder
- Sliced Tomatoes
- Roasted Chili Corn or Corn Nuts
